Ok, easy - do a new thread, and at the bottom is a check box which says 'Yes, post a poll with this thread' - check that, add number of options you desire, and then when you submit post, you can edit all the options.

I always add the poll afterwards, using 'thread tools' pretty straight forward that way. BUT you do get the odd 'wheres the poll'
