Thanks for the detailed list! Wow!!Welcome and congrats on your next adventure! Looks like you have some fun times ahead! These little guys rust alot, as I have been told (and witnessed). I have heard they take on water and keep it until a rust hole lets it out...
I kept a list of suppliers I used during my 600 restoration. None are in Canada, sorry. In the end, I ordered something from just about every one of them. I left the notes in the list to provide guidance. I hope this helps!

Ricambio was the most helpful. Chris Obert at fiatplus.com is grumpy but has a solid selection of new and used body parts. I started ordering a bunch of stuff from the oldtimer-shop but they sorta screwed me with my disc brake conversion, so I stopped ordering after that.

I’m no stranger to rust as I’m restoring a vw beetle and a pair of Karmann Ghias, And they really rust bad!
I’m off to Italy in September but can see hauling body metal on the plane.
Possibly smaller items.
Parts seem a bit cheaper there.

Have a great trip! My family and I went last summer and it was very fun. Rome, Florence and Monterosso... I did not see a single 600 while I was there. Seems they are just not something folks typically save. I guess that is part of why I love them. I did see several OG 500s, though.
One thing worth mentioning... your 600s appear to be early versions. I had some trouble finding early rocker panels for my project. I ended up with a later model rocker for the passenger side. It does not fit as well and the door alignment is crummy.
Also, the front fenders and nose were clearly created with some very old (or cheap) tooling. They were warped as all heck, poorly bent and had lots of forming defects... like drag marks and wrinkles at the deep draws. I had to really work them to get them to fit. The metal is so thin, block sanding it out and you will have to use bondo to smooth that stuff up. This is something you likely have experiences before, but I thought it was worth mentioning.
The logo hole in my nose isnt even centered... lol
another thing i recommend... roll your fenders. Roll the crap out of them. If you have any desire to fit 13in wheels and tires in the future, you will need the extra clearance. I waited until after paint, and that was a mistake.
