For some weird reason whenever I switch off the engine I hear a loud beep.

It's got nothing to do with the digital display as no warnings are coming up on the screen, it sounds very loud like it's coming out of the speakers but there doesn't appear to be anything wrong with the stereo.

Anybody have any clues as I'm stumped.

Done a bit of detective work and it definitely is the stereo, at least it's not an engine warning message. (y)

So why would the radio start beeping, is it something simple like the radio station not being tuned in properly? I don't know why it would do it every time it's switched off though.

If it just beeps when you turn the ignition off, it's a warning; tells you the next time you turn the ignition on, the radio will come on automatically. If you've got the factory fit Blaupunkt, depending on model, pressing the middle of the volume control mutes the radio, holding the button down for a second or longer turns it off. You can alter the mute volume to the point where with the engine running, you can't hear the radio; easy to think you've turned it off when you've just muted it.

Beep(s) when you're driving are usually caused by the signal strength dropping low enough to trigger the RDS systems AF (Alternate Frequency) search.

another reason could be a security reminder to remove the radio faceplate before you leave the car.
