does this car have a water temperature display?:confused:

a have got a red light that illuminates if it gets too hot. but the light only comes on when the ignition first comes on as normal.

there is only 2 dial 1 for speed and 1 for fuel.

No, no gauge, just as you say the warning light. Unless you are very very unlucky - or you seriously neglect the occasional check for oil / water / etc you will never boil a Fiat JTD. The truth of the matter is you may need to give it a radiator quilt in the cold weather to get it up to temp.

I use a bigger version of these split lengthwise popped over the radiator grill in the winter otherwise it takes more than 30 minutes to get up to temp.

I'm not suggesting you quilt your radiator, just reassuring you that unless you neglect it badly, or loose a hose you don't need to worry.
