Can anyone offer advice on the best way to remove the wing mirror rear covers please. My car has manual mirrors and is the later, more curved design. I dont want to break any clips or fixings.

It may sound strange but pour hot water over the plastic first to make it more pliable as they are easier to work on in the summer but more brittle in colder weather.
I would also start prying it apart at the bottom near the swivel part using thin wide blade screwdriver to minimise damage and gently work your way around.
 
Are we talk about the door mirror cap

You move the mirror around to create a gap then Flick each clip off

The mirror glass is glass so don't lever against it

This is a 500 but the panda is close
