It's one of those things where you need someone "in the know" with experience of that era Fiat and time to have a good poke about and think, with a methodical approach. A normal auto-electrician may be useful but won't be able to do a full analysis of the car, similarly an old-school mechanic may not have all the gadgets for a full checkover.
You could consider checking or changing the inlet manifold temp sensor if you think it's temperature-related ...

I've had issues with mine in the past.
Have you had the car's ECU diagnosed? It's an early type so doesn't really give dashboard warnings and detailed fault reports, but some faults with wiring or sensors should be stored and would give a clue.
There's always the chance that recent poking around and repairs have slightly disturbed something that was a bit flaky, so that's something to check. It seems to me that it's a sensor going to the ECU that is confusing it, possibly it could be something around the plug leads / distributor so double check those.
I can't remember if you've done anything to the lambda sensor in the exhaust, but those affect the running and likewise an exhaust leak around the lambda.
Remember that these were still simple cars with a good established engine that received some modernisation, so it should be fixable with internet information and parts suppliers....
