I have a 1.4 fiat fiorino same engine as the punto, the engine is hunting really bad, sometimes cuts out as soon as it has started and sometimes as I go to pull away after just being started it stutters as if no fuel coming up, I can hold pedal to floor and nothing happens then all of a sudden it goes. Could this be the map sensor or maybe the coolant sensor? Any ideas?

Could be anything

First of all, obd scanner asap.

could be a multitude of things.
spark plugs, coil pack, maf sensor, blocked injector etc etc etc.
I assume the engine management light should be coming on ?
If so, then the only sure fire way of being certain is to read the error codes.

engine management light isn't coming on and there are no error codes present when checked with code reader

First all the obvious:
1. When was it last serviced and is the fuel filter OK
2. Have you checked for air leaks? My 1.2 was a real pain until I found the pipes under the air filter housing were split (both the large and small ones)
3. Does yours like the GP suffer from Battery earth problems? If so clean the battery terminals and all the car/engine earths
4. Another "is it the same question" GPs suffer from wet fuse boxes which cause strange running issues - check that too
