The needle on my speedometer seems to bounce around when I put my foot down. Is this just a case of tightening up the cable and how easy is this to do?
Eratic speedo needles are nearly always the result of a knackered speedo cable. It could be the drive from the gearbox end causing problems, but that's unlikely. As a new cable is pretty cheap and simple to fix it's best to just replace it!
