The gas pedal on my car has some dead zone. When I step on the gas, there's no reaction if I press only for 2 or 3 cm, then at some point, the engine reacts immediately. I checked under the bonnet and the wire that goes from the pedal starts moving some part near the engine (don't know what is that part named, it probably controls amount of fuel injected) only after being pulled for a few cm.

A mechanic said this is normal and it should be this way, but it is very annoying for me. Can I just tighten that wire and how? There are two 17 mm screws on it, should I loosen them and adjust the wire?

The engine is 1.6 with fuel injection.

I have a 1.6ie also and my engine responds immediately... there should be around 5mm free play in your cable, that is all.
