OK Im seriously considering a 1.1 Uno for a friend of mine who is without car, as a present, anyhoo, if she doesnt want it, my fallback plan is to buy it, strip out weight and use it at track days for fun. Would it still be road-legal to run a car without parcel shelf, rear seats, front passenger seat? I mean thats a LOT of weight ( about a weeks worth of macdonalds at least )?

Would the car need to be reinforced?
 
Yes to your first question and no to your second.

You could strip it of all available parts which don't affect the MOT ie lights and glass and seat belts.

I think you can even toss the heater matrix / centre console and still be street legal. I can´t see this is relevant for the car´s safety or construction. Throw out the roof interior and replace the air filter box with a K&N bolt-on filter (part number RD6020 or 6000 depending on clearance to the hood). A little more weight to go there.
