i think they salt it and all sorts, helps preserve and age it....it's a gourmet thing.

It would taste fantastic. All red meat should be properly matured, that's why most fresh supermarket meat tastes bland, because it's not aged enough.

It even more gross for game. You basically hang it until it's crawling with maggots, then you wash them off and it's ready for cooking.

I'm not sure, that pizza could be hard to top... even with a piece of ham that has been absorbing salt for 3 years. Ugh I don't get it, if I wanted fall apart meat I'd stew something for like 3 hours, not wait three years.

Watched a programme on sushi the other day.

They keep it in a freezer at -77 so it keeps colour and taste. It comes out as fresh as when it went in and they can leave it for years
