It would taste fantastic. All red meat should be properly matured, that's why most fresh supermarket meat tastes bland, because it's not aged enough.

It even more gross for game. You basically hang it until it's crawling with maggots, then you wash them off and it's ready for cooking.
 
How about that cheese some frenchies eat thats crawling with maggots. Please, no one post a youtube link to the stuff lol.
 
I'm not sure, that pizza could be hard to top... even with a piece of ham that has been absorbing salt for 3 years. Ugh I don't get it, if I wanted fall apart meat I'd stew something for like 3 hours, not wait three years.
