looks like noise in the circuit, i doubt its actually the oil pressure that is the problem.

it means the circuit for the gauge is getting interference from something. its hard to say where, but the fact that it happens under hard acceleration could suggest the wires are getting pulled or catching on something because the engine moves more than you'd expect under hard acceleration.
