Just bleeding the system would make it work for a very short period of time. So they would have have to replace the master cylinder (+/- slave and bleed) for it to work. So you can see if there's a new master or slave cylinder. If there isn't, they must have replaced the clutch, as they said.
 
Mm, you'd have got the same result if you had the slave bled properly.
Did you 'see' the clutch plate assembly taken out?
Unscrupulous garages would bleed the clutch, and then charge for a complete replacement. If you don't know much about cars you'll always be at the mercy of dodgy garages.
I'm not saying you have been, but who knows. You certainly haven't posted anything that convinces me that you proved it wasn't the hydraulic system.
However, it's your money and your choice.

I just did a new clutch and flywheel on my daughters car last year. Exactly the same symptoms as the OP. At first grinding into reverse then lost all gears. Got it home by driving off the starter and rev matching through the gears! I even made my own adjustable clutch rod for the pedal to adjust the bite point but no good. I replaced the master (which was a pain in the backside) and it made no difference.

On hers the clutch still had a bit of meat left on it but the pressure plate was toast anyway. 1 year later and the car is great. :)
