Btw, Just in case nothing works; I know you can purchase breather caps for old classic cars; is there one I can use on the Grande?

Fiats way has worked perfectly for millions of vehicles

It will be something simple

So let’s fix it properly

let’s not panic

Too much blow by would be

cylinders, cylinder head or rings to fix properly

Disconnecting the system and changing it for a oil catch can will still be venting some gasses into the atmosphere and not really to be recommended.
 
Right, time for an update.

So the PCV system(?) was clogged up in 3 different places (see pics).

Cleared out all the gunk (was like black lard), and put everything back together now. Hopefully this will stop the dipstick from popping out and spraying oil everywhere!

Gonna take it for a test run later on, so here's hoping it's been fixed.

Cleaning that is certainly going to help, it looks like the car was a bit neglected before your ownership.
Not advising you to do this as haven't seen the car, but if it was mine I tend to run engine flush to clean the cr*p out and fit new oil and filters on any vehicle I buy, but other Forum members feel dislodging dirt causes more problems on certain models so maybe not, it may give it a heart attack ;)
