You have to go to an Abarth dealer, not a Fiat dealer - simple as that.
I originally ordered mine from a local Fiat dealer but the order had to be transferred, along with the deposit before I could actually get the car. The order was placed before any of the franchised dealers were announced so you wouldn't get away with that one now unless your Fiat dealer really likes you and doesn't mind all the hassle of making a new car sale without making any money on it.
Do some shopping around at the Abarth dealers and you may be pleasantly surprised. It seems most of them have their original demonstrators up for sale now which means the lead time on new orders is shrinking as they aren't supposed to sell the demonstrators until they can get replacements. I don't think they had much say in what specifications the original demonstrators came in so they are probably just keen to swap things around spec-wise.
A test-drive is essential and you want to feel the difference between the standard and SS versions. The standard performance is fun rather than stunning but quick enough to upset the regular hot hatch applecart. The SS on the other hand is somewhat better performance wise but you may find the suspension too harsh.
