Is it possible to upgrade the suspension on a standard panda so it rides as high as a 4x4?
If so, what parts would I need to replace as where I live there is a lot of tracks and I've bottomed the car out a few times and the wife is complaining...
Any pointers would be appreciated.

I suspect this would be an expensive thing to do. At the front, basically it 'just' has elongated springs and revised struts to provide the extra height. But at the rear, the 4x4 models (and also the non-4x4 versions of the Cross) use a completely different rear suspension set up with a different shaped beam, along with increased height springs and revised damper mounting points. They also all (I think -- not sure about the 2WD Crosses) rear disc brakes as part of that change.

I messaged a few companies who specialise in this kind of revision and I suspect the extra 10-15mm that I might gain probably isn't worth the cost and work.
Driving slowly is maybe the best option 😉

The 4x4 sits 50mm higher off the ground (at a total of about 150mm)... so I suspect you've been looking at the 'lift kits' out there that add a 15mm spacer to the existing suspension. These are there to bring the current 4x4 up to the 165mm clearance the previous (169) model had. None get close to the 180mm of the original 4x4 Panda though :)

Maybe it's possible to add a little extra with a longer spring or adding spacers under the spring? Maybe there is a higher profile tyre you can fit?

or just trade it in for a 4x4 you'll luv it I promise! :)
