I've a problem with the so called "mayo" in the oil filler pipe which is causing the perfomance of the car to suffer badly. I know its caused from moisture in the engine but I don't think its coming from the coolant as that level is fairly consistant on max. Could it be coming from just doing short journeys of 5mls to and from work in winter, which is not allowing the engine to heat up fully or could there be another explanation.
 
5 miles is long enough for the engine to get fully hot. I suspect you are running with a faulty thermostat, which will not allow the engine to reach proper working temperature and will undoubtedly lead to sludge build up around the oil filler.
