Two things - I have heard that if you donot get your servicing done it will invalidate the warranty.... Anyone confirm this???

Also - does putting 17" rims on invalidate it as well?

To quote from Fiat literature

Any service must be carried out within +/- 30 days or +/- 1000 miles (whichever comes first) of the time or mileage specified.

Any part(s)and materials used shoulg be Fiat Genuine Parts or parts of an equivalent high quality.

The work should be carried out by a Fiat dealer, or an independent VAT registered service/repairer outlet. If you have your vehicle repaired or maintained by an idependent repairer during the warranty period, the warranty may be lost if the work carried out is faulty.

Regarding the wheels if you have doubts why not ask your dealer.
