The plastic surrounding the nut stops me getting a spanner round this coolant sensor to remove it.
The plastic doesn't seem to move.
Any help would be much appreciated.

Looks like the new sensor comes with a new housing so both are changed
 
If you've got a warning light / error code sometimes your problem could be the wiring is loose.

After replacing it, it was all good to go for 3 weeks. Then the warning light came back. Realised the issue was that the wiring was loose for the thermostat itself...
 
Thanks .I read the post you gave me the link to. It does look more like a thermostat/thermostat wiring problem. I don't have a Fiat fault code scanner but some generic one so fault code my hve been misleading. Also I have a temp guage on the dash that is erratic. All the problems ( engine management light & temp gauge erratic or zero) occur after driving for 20 mins. If i switch off the engine half way through a longer journey then there's no problem.

Hmm, I never had that issue. Your problem is definitely the thermostat / thermostat wiring issue.

It's an easier replacement than the whole housing unit itself though. Watch this video, it's really helpful. It really could be just the inside is busted, but it could be the wiring is misleading something. I'd say give it a go at cleaning / unplugging the wiring and cleaning that and then plugging it back in. My problem was that the previous owner when replacing the engine gasket, let oil leak everywhere and it went into my wiring under the thermostat which caused it to not conduct enough electricity. A brief clean helped in the sense that it didn't pop up as frequently. I do have to properly clean it though and then I'll let you know if that's changed anything.

If you are going to buy a new thermostat, be careful on ebay. The thermostat itself should come with a rubber gasket and on ebay they sell it with a cardboard one. Also at times chipped/damaged. If you can salvage you old rubber gasket then go for it. If not, I'd recommend buying a new one. I haven't fitted mine as of yet as the problem went away for a bit and I just need to clean the wiring properly.

Also clean the wiring off the housing unit as well. (Obviously not with wet wipes but like tissue.) If none of this works lemme know, could be a more bigger issue with the cars computer.

Also does your fan constantly turn on / go on quicker than it should?
