When fitting new speakers is there an easy way to find which cable is the + and - ? With a multi meter or another way. My cables are a different colour to what comes out of the hu so must have been joined onto somewhere.

well normally the positive cable will have a stripe running on the outer sheafing
you could run some bass through the speaker and watch for cone to come out rather than in
or as said you would need to multimeter it from new to old

I want to install some pioneer or Sony door speakers so need to cut the fiat speaker plug off the end and crimp new spades on, wandered if there was an easy way to check cable polarity before I crimp them on?

You can buy an adaptor to spade connector clip for fiats
I have some with no issues tho
