To remove the speedometer from a right hand drive Fiat 500 is as follows. Left hand drive will be the same but obviously a mirror image. Suggest you disconnect the earth battery lead before.

Remove the heater control panel. Turn all of the dials as far as they go one way, either tape them, or remember which way you turned them. Use a blunt tool or trim tool to prise off the panel. It can be a bit stiff, but just pull it firmly and it will come off. Leave the power cable connected and just let it hang out of the way.

Remove both parts of the coloured dash trim. The small part will just pull off. The larger part needs to be unscrewed from underneath, just in front of the parcel tray. There are two or three screws to take out. There are also 2 screws behind where you just took the heater panel off. You can then pull it off. Disconnect the electrical connections and put to one side.

Remove the upper and lower steering cowls. The lower one has to be removed first. It is held on by two Philips screws underneath. The screws are in recessed holes and a bit of feeling around with a Philips screwdriver and jiggerypokery to get the screwdriver onto the thread is a bit of trial and error. If you can't do it sitting in the drivers seat by feel, you will have to use a torch and climb underneath and lay on your back. Persevere with the seated method, it sometimes takes a while to get the position of the screwdriver right. To remove the upper section you will see two screws that are revealed from taking off the bottom. Remove these. If you try to just yank it off, it will come but it will break the part that the screws are screwed into.

You will see two torx screws that hold the speedo cowling on at the bottom. These can be fiddly to get to. Remove them and then remove the small Trox screw in the underside of the top of the speedo cowling. The cowling will then pull off.

This will then reveal the several screws holding the speedo on. Remove all of these and the speedo will then just pull out.

Unlock and pull out the power connection. To get the speedo apart (if that's what you want to do) remove the four Philips screws in the back then pull the clips apart holding the front of the speedo to the back. It will then lift away.
Refit exactly in reverse. I will video this next time I do it, as that will make it easier to folllow.
