I left my Panda for nearly two months without starting it. Hadn't meant to leave it so long but at least had the battery on trickle charge for much of that time.

When I went to start it... it wouldn't fire. I cranked it maybe three or four times over maybe, 20-30sec in total? The last time it started to catch and then fired up.

I took it for a 30min drive and thought at first that it felt sluggish. Once I'd been driving for about 15min I started to rev it out a bit and began to notice the peppy mid-range it had come back. It's been totally fine since.

I'm surprised that the fuel system took so long to pressurise. Oh well, I'll try to not leave it so long next time.

Sounds to me as if the valve actuation took some time to prime - and, I suspect, until the pressures there are up to some prescribed level the ignition won't try to run the car and/or the fuel system won't fuel the injectors.
 
Even in just the cold mine have a few seconds of coughing sometimes before it runs properly, needing a tickly of throttle to get it over its initial reluctance. Only happens on first start on a cold morning, but undoubtedly to do with cold, thick oil taking a while to get to all the important places.
