Depends.
If the tracking significantly is out you get any or all of the following:
premature tyre wear on an inside or outside edge.
tendancy for the steering to pull one way.
wooly, less precise steering, and a tendancy to skid earlier under heavy braking (as the front wheels aren't both pointing the same way).
However, you can have the wheel off centre, but tracking near correct - if the wrong side was adjusted to correct a tracking error.
If it's done properly they should clamp the steering wheel straight ahead, then adjust either or both track-rod ends.
If it goes straight when you take your hands off the wheel and the tyres are wearing OK, you could take the steering wheel off and reposition it.. BUT if there's a big mis-match in track-rod length you may get a tyre fouling inside the wheel arch on full lock... which it will be doing now anyway.... and it won't track up exactly either.
