Not sure what technology insurance companies have or use to detect this sort of thing but one thing i know they will 100% be able to see is that the ecu has had a new file uploaded to it at somepoint, i.e when mapped. But i dont think they would be able to tell the difference between a map or a Fiat update for example.
Not worth the risk though for what it costs especially if you have a huge crash. As the money would then be coming out your pocket for third parties.
The only time it would ever be brought to light would be in a multi million £ claim and or where people have died.
Quite often the car would be sent to a Police forensic lab where they often read the data from the car's computers. They can use the Airbag ECU to find out the speed at impact for example (and thus proove dangerous driving if you where speeding).

Adrian flux quoted me 2 grand. Clean licence standard car 3 years no claims no crashes. I'm guessing insurance has gone up in the last month or so
