I have found a loose cable on my engine and cannot find the plug for it. It seems to run from the ECU before splitting into multiple cables, two of which go to the alternator. My Punto is suffering from a lack of acceleration in low gears and am hoping this cable connects to a sensor somewhere that will fix this issue.

Hi, Welcome to the FF.
If you can find the holes where the 2 black plastic cable fixing clips go, that should get you closer to where the plug belongs. However, Fiat (along with other manufacturers) often use the same wiring loom for various options and leave redundant cables in the loom. The white compound in your plug suggests it's a redundant cable that's been sealed.
You also appear to have a spare, or disconnected earth cable hanging to the right of the dipstick.
