2007 will have OBD2 so if the HUD device you're looking to use connects via OBD2 then it should work. I've not looked into HUDs though, so if it requires wiring into speed sensor etc, then it might work it might not, I doubt anyone's fitted one to a Ducato before ...
From what year did the Ducato have OBD2?

OBD2 standard was adopted by most manufacturers circa 2001, but I'm not sure exactly when it come into the Ducato. It may well have been introduced midway through the 2nd generation (1993-2006), possibly in the 2002 facelift. Definitely 3rd gen 2006+ would have OBD2.

My 2006 x244 has an OBD2 port. This tends to confirm the Eklipze3k's reasoning.
