Hi,
Welcome to Fiat Forum. Was the fan working before you changed the head gasket? If it was working OK before it is most likely that you either:
Left a connetor unplugged
Damaged a cable or loom
Blown a fuse.

So Visual inspection is the first thing.
Is it the 8 valve or 16V (150HP) engine? Do you have Multiecuscan? If we know that we can give a bit more detail on trouble shooting.

Does ecu maps starts cooling fans? I've replaced thermostat because it was stuck open and now the fans won't start.

Hi,
What engine is in your car?
For the diesels at least have two fans with a solidstate speed controller. The speed controller is controlled by the engine ECU If the fans have stopped working after you changed the thermostat it is most likely that you have forgotten to connect something (or not put a plug back fully), have damaged wiring, the temperature sensor on the thermostat housing or if the thermostat came with new sensor it could be faulty.

Apart from having a good look around where you were working to make sure it's all connected properly and no obvious damage fuses checked etc, the answer is the usual one - to get diagnostics such as Multiecuscan on it. This will allow you to read the sensor values and manually operate the fans as well as reading the fault codes.

Thank you for great explainention. The engine is 1.4 T-jet. I have solved the issue, it was problem with reostat not ECU as I was expected.

I have also solved the issue. I sprayed some electric spray to connector in upper side of the radiator but errors were still there. Then car was parked for a couple of weeks and after that everything was working again.
