Changing the flexies may be worth a try, they can break up internally. I think the coupe also has a proportioning valve so the back wheels need some load on them, but I imagine a garage know about that and also are going LH rear RH front RH rear LH front. It sounds as though they can get fluid through all the bleed screws, and its free of bubbles. It's really weird if all they were doing was changing the fluid and it was fine to start with , did they do them one at a time or empty the whole system and blow through with compressed air ? Can they get a pedal by continuously pumping the brakes, I have heard of systems needing this to be done then the bleed screw opened and closed and a slug of air is blown out. Other than that its trace all the brake pipes check for corrosion and damage and if they are all OK then new seals in the calipers, in theory the servo should have no effect on this as if it fails you should still have unassisted brakes. BTW, my money would have been on the master cylinder, it is not unknown for new parts to be unservicable, as a last resort they could put new seals in your old one and try it.
