Random Oil Pressure Warning [T-Jet]

Right - so I spent the last few weeks trawling this forum for info, and have spent a small fortune on workshop fees by now, and this has me stumped, so now I am asking for help.

My '08 model T-Jet 150 is kicking up seemingly random Oil Pressure warnings.
This is the usual "Oil pressure - turn of engine" warning.
HOWEVER:
It NEVER does this on start.
It doesn't do it at any particular interval, time spent driving, temperature, etc
It sometimes doesn't do it for days.
It's not the usual warning you get when you stall the car.
It sometimes goes on, then immediately off again, then on again in rapid succession.
It hardly ever stays on for more than, say, 1 minute.
I have seen it do this on accelleration, on decelleration, on constant throttle, across the rev range.
The car is not leaking oil anywhere that myself, or the mechanics have picked up.
In short: I have not seen ANY pattern to this.
One thing I HAVE seen (but only once) is the water temp gauge dropping as the warning light goes on, then rising again when the light goes off.

I had the car in the shop twice recently for various things (clutch, belts, driveshaft spider joint, etc). In the course of that, the following was done:
Oil Pressure sensor was replaced.
Oil pump was checked.
Oil Filters replaced multiple times.
Full oil flushes (2 of them) were done (hence quite a few filters were replaced)
The mechanic thought (and I agree) that the temp gauge and oil pressure coinciding seems like it could be a grounding issue, so all the grounding wires were checked.
As usual, oil pressure issues don't show in diagnostic logs.

My logic says that the oil pickup is fine... this, judging by the pattern and what was done, seems like a wiring issue.

We all know finding a wiring issue can be a bit like a needle in a haystack.
So my question is: before I spent even more on this, is there somebody here that has had similar issues, and could possibly point me in a direction? Something to try? This has, by now, cost me around 2K Euro, and I am really not in the mood to pay infinity more labour dollars if there's no guarantee that they can find the issue.

Maybe faulty gauges/instrument panel. Randomly loosing contact on some part.
Only thing that you can try is replace instrument panel with used from other car. If you find one with less km stand than yours, easily correct them with MES

Well, you have done everything what i would, only thing that je left to check is electronic.
Interesting is that temperature gauge drop.
That is either ground connection thet you checked, od maybe loose pin in connector itself

I had a similar problem on a Renault Savannah 2.1D. In that case I checked and checked again on a long drive home at night. Nothing. Eventually I thought it must be a wiring fault and floored it. The following day it proved to be a loose oil pump feed pipe. It spewed all then oil out. I was ready and turned it off instantly and sustained no damage. I would definitely get an independant engineer who knows what they are at to check the oil pressure with an external gauge they will be able to see if there is fluctuating pressure. You may have a failing oil pump pick up or internal oil pump failure. These things can be fixed cheaply if caught in time. I hope you sort it an would be interested in the cause if you actually get to the bottom of this. Good luck.

I have tried to find patterns so much by now that whenever I have a theory, it gets shot down pretty much immediately.

I thought it had to do with engine load, so I tried the usuals - flooring it in the "correct" gear, flooring it in a way higher gear, nothing... then it does it at Idle at a red light suddenly.

As I said - there is a mechanic working on it with me at Fiat, and an independant, ex Fiat one is helping me find the issue as well (as a friend).

The Dashboard is the one new idea so far, because it would imply that we've been looking at the "wrong end" of the whole thing...

I'll keep you updated as I make any progress...
