Did you ever get an answer to this? I'd love to know. My Dad has a Delta with all badges and grilles changed to the Lancia ones - only thing is the start up screen now.
 
Surprised to read it shows Chrysler in a Lancia?
Typically this is taken from the VIN data (i.e. not data in the phone) and then matches the car. This was done so if manufacturers share a platform, the logo matches the brand.

I bought my Blue & Me satnav from a guy with an Alfa Romeo, once paired with my Fiat the splash screen changed to match.

Even better there is a picture of the car in the menu system which also changed to match the car it was paired with. (y)
 
I expect it has a canbus connection and pulls car data through that connection. Like @AndyRKett mentioned as well, it pulls the unique car data from the car it is connected to.

Perhaps double check if all connection are in place in the correct way?
 
I believe the satnav will be able to identify the car of the satnav is pre programmed with the details for example “VIN NUMBER ABC123 is this particular car” but if it doesn’t know the details then it can’t update accordingly

The splash screen and other graphics are already in the satnav, so I believe some check between the car and the satnav is carried out and then it decides what to display

You probably could access the satnav via usb and change images and graphics if you want to manually, on an old tomtom satnav I had you could upload files and images to replace standard ones if you wanted, I assume that’s no different on the blue and me set up, but I’ve never tried
