Two questions.....is there any way this feature can be turned off other than the button on the dash, is there a fuse that can be removed?.
Bought the car (2012 lounge) for my daughter 6 months ago and she's learning to drive and this feature can be intermittent at times (new battery's been fitted) even when the car is upto temp etc so I'm thinking the less distractions for her the better.

Secondly, there's a resinating/vibration from the exhaust when you reach 2500 rpm (everthing checked and secure) is this most likely because of a cheap aftermarket exhaust replacement, does this seem about right?

I believe there is now a software update from Fiat that will allow this but it is for newer models-The old way of removing the stop start wire from the battery will activate a check engine light and is not recommended

The exhaust sounds like the baffles internally on the silencer may be a little loose-we had this on a Citroen c1 and i got the exhaust place to replace it-the internal welds may be poor and given the right frequency of revs, they can rattle
 
You can unplug the clutch pedal sensor to permanently disable stop start.
