A check for a fault would be a good idea. If you have, or know someone with, diagnostics software like Multiecuscan It will allow you to look at the signal from the throttle pedal. This will let you see if it is increasing as soon as the pedal moves or if there is play or backlash in the linkage. It maybe that the throttle needs to be re-learnt, but I don't know the 500 system in that level of detail (I own a Croma Diesel).
It would also be worth checking if the engine ECU software is up to date.
