Car is out of warranty in April so plan to get it serviced etc at non main dealer (others have been main dealer). Want to make sure it gets everything it needs so what should I be covering

Oil - what spec?
Filters - oil & fuel?
Spark plugs? What's the best ones to get?

Just want to give it a full going over as I will probably drop from every 12 mths to every 18mths due to the low mileage now.

Probably not the answer you really want to hear and other members will undoubtedly 'sigh' for me mentioning it. Personally, I'd just get a last low mileage service from a Fiat dealer. You'll get proper diagnostic checks done as part of the service, any software updates etc and hopefully the right oil etc. After this service, just go to a trusted local indy. Some people might not be bothered about having full diagnostic checks done on their car, but many independents don't subscribe to every manufacturers diagnostic databases, it costs too much money so they can't check everything and certainly can't often download the right software patches/fixes.

As for plugs, they are a really easy change yourself if you are so minded. I did the plugs on our last POP, took me about half an hour. The original plugs were shot after 10k miles.

If you change them out yourself, it'll be a damn sight cheaper than letting the dealer do it. If you use genuine branded plugs like the ones in the link, you won't have any issues. And yes once again before anyone gets on the band waggon, you can buy just normal NGK branded plugs, but the price difference will be negligible. You could of course still buy the plugs such as the ones in the link yourself and get them fitted by a good local indy.

Check the part number for the oil filter above, but I think you'll find it does the 500 1.2 also.
