Remember that its the oil pressure that keeps the rotating metal bits apart.
You check the oil without the engine running, so there is more oil in the sump at that point than with the engine running.
Dip the oil immediately after switching the engine off, then check 10 minutes later.
There will be more, and its not being made by the engine.
