I would like to know, if someone has already done this, if is possible to register in the UK a fiat 500 F (imported from Italy) with a fiat 126 engine or if is necessary to assemble the car with its original engine? There could be problems

Yes, I have done that and all is ok. Just need to declare correct capacity of engine and engine number.

So I will not have problems if I try to record in the UK a Fiat 500 F with an engine that has a different serial number than the one stated on the vehicle registration document?

How is the certification of the new engine?
