So the Fiat Panda 100HP didn't release in Australia. Fiat options are very limited in Australia in general.

I'm wondering, how does the 00s Punto (not 2010s) handle in comparison?

How modifiable is it to turn it into a little sporty Fiat with four doors?
 
Define “sporty” you’ll never get a 1.2 Punto (or 1.4) to out perform even some very boring like a 1.8 Ford Focus.

The fun of a small, small engined car is driving it to its limit without risking losing your licence.

You can buy a sporty Punto, the 1.8hgt, there are abarth versions of the grande and the Evo, but I’d not bother throwing a ton of money at any run of the mill 1.2 or 1.4 to make it “faster” someone still going to leave you behind in a big engined people carrier
 
Most (99%) people asking such questions on forums, are not prepared to pull off this kind of projects.
For various reasons, but most common are:
- money (mods/tuneup are not cheap hobby), buying other car (more powerful from the factory) is way easier than mods/swaps,
- time (psychology - you have no patience, you are not able to finish long term projects, Google "delayed gratification"),
- management (you cannot coordinate the project, it's a mess, nothing ordered or outsourced correctly and/or on time),
- knowledge (this will spoil the project badly, this will cost money and/or time, Google "The Dunning–Kruger effect").
 
There're also these TJET versions of 1.4 with turbo which are really good too. But they're already over 10 years old, so you'll get a project anyway.
