Items that can be removed?

Is there an article or collection of articles that can guide me through what I am able to take off of the engine on my 79 2000? It seems as though many of the emission control things can be removed, but I don't know what specifically and what I have to do post removal to adjust.

I ask this question because it seems as though I have a bad gulp valve and cannot locate one and if I did locate one, how can I be sure that it's working, so I wondered if there was a way to just bypass the thing.
