First thing to do is work out if water is getting into the heater matrix, after a little drive check the 2 pipes at the back of the engine that connect to the centre of the bulkhead (this passes through the bulkhead and joins to the heater grid).
If these are hot you could try removing the bleed screw on the right hand hose and clamping it a bit nearer you, if water comes out it is passing through the matrix OK.
Careful though, the water is obviously gonna be very hot.
If its not coming through it could be blocked with limescale, calcified coolant or radiator leak fixing fluid. Not much you can do apart from pay extortionate cash to get it changed.
If the water is hot and passing through the matrix the only thing left is the heater baffle. You will need to sit upside down on the drivers seat with your head in the footwell looking up behind the heater controls. As you turn the heat adjustment dial you will see a rod and a wheel move, this moves the baffle and lets the hot air through. Its not easy without taking the centre console out but you will have to work out what has broken/come loose and replace it.
I doubt it will be low coolant, if it got to the point it didn't pass through the matrix the car would be serverely overheating.
