mk2 ones do come off. i've done it before!

unclip the seat cover plastic clip at the bottom of the seat (on the back where back passengers feet are) then reach up inside all the way to the top until you find where the headrest fits in.

There are plastic clip things all the way round each metal post. Unclip about 3 or 4 of these things around each of the posts. The headrest should now pull out.

To put back in i think it locks shut when it's pushed in place but i can't remember, might need to push the clips back in.

This might work on mk1 with no buttoms but not sure as i've never owned one.
