General A little help, clutch problem, but its a new clutch!!

Hi, ive been reading this forum for many a months, and it has helped a great deal, i am very greatfult to the very helpful users here. first a lil introduction, im v-handy when it comes to electics, and realy dnt mind takling pretty much anything on my car, just as long as i got the tools. iv'e had my mk1 60s-team since my 18th bday 59000 miles, been faithful and reliable. but now has come a time where i cant find the solution to this problem, so ive joined up.

the problem
about athousand miles ago it was time for a new clutch, i attmepted this myself, but was stumped when it came to taking the transmition out, as i could fathom how to support it, so i found a local mechanic who did it for £150, fantastic little find, hes done me quite a few feebies, and more recently helped me with timing problems.
now i have a problem that the clutch feels like its slipping even though its brand new, especially between 3 & 5 thousand revs, if you were to accelerate reasonably hard in any gear except 1st, then between 3 & 5 it would rev but not increase in speed, then at 5 it will stop, and the car slowly increases in speed till it "catches up" then accelerates normally.
now my dad who was very enthusiastic with cars in his day (days long gone) thought it might be a problem with the clutch release system, its a hydraulic system not cable dirven.
can anyone shed some light on this
many thanks
