I need a new head cylinder for a mk2 1.2 8v punto. Does anyone know where to get them from and how much should hey be?

Try a local scrap yard. There is about 5 puntos in a scrap yard near me

I can get a used cylinder head delivered for £160 online. Thats without a camshaft. I think thats a good price.

you will need to change the cam cover and fit you inlet stuff, but this is nearly new

Will a 1.2 8v engine from any year fit my Mk2? ie, MK1 MK2(obviously) MK2b or MK3?

yeah all fit, some external bits from your engine will need swaping over like cam cover, but thats only 4 bolts, all quite easy
