After a process of elimination I think I have solved the problem.
It was fuel delivery related, a bit like an old carburettor that had water baubles in the float bowl being sucked up into the jets under acceleration, cutting the engine out, momentarily.
The Pandas have a fuel decompression valve to the left of the throttle body (looking into the bonnet). Its covered with a screw on plastic cover, much like a tyre valve.
I opened the valve (ENGINE SWITCHED OFF) and watched the fuel squirt out onto a rag.
I replaced the valve cover, securely and restarted the engine. Started instantly and settled down to an even tickover.
Took it for a 20 mile test run, open road and town, and so far, no problems.
I had also checked the security of all the fuel related relays, fuses and connectors, including the block connector that plugs into the top of the fuel tank. (access under the rear seat squab)
So there we have it.
