Recently had someone crash into me in a coop car park causing 1200 worth of damage ?
They have agreed to pay me cash as apposed to going through insurance.

Give them a short time frame to come up with the cash (make it a few days). They may stall and then your insurance company may want to know why they were not contacted. Some like to know of all incidents anyway.
I had my Lancia involved in an incident. The other party wanted to pay so we went to a panel beater and he made the contract to pay it. His problem then. If you make the contract to get repair then you are stuck with the bill having to resort to civil action if they don't pay.
