Just wondering if anyone has fitted an aftermarket horn before?
If so, does anyone know which wire is positive, and which one is negative?

If like other Fiat models it won't be that simple as its a negatively switched circuit, so there will be a constant live feed to the horn. Worth checking though.

Just thought I'd let you know for future reference that all was fine and was just a plug and play jobby! Although, I regret my choice of horn!

To do the big train horn correctly, you'll need more than a switch.
These run from a compressor, usually installed in the boot.
So the first thing you'll have to ditch is the sub.
