40yrs of MOT's and I've NEVER had the oil dipped or probed on any vehicle.

So you watched every minute of every MOT you have had done in 40 years?
I find that harder to believe than that every tester of a CAT equipped car you have had tested did not follow the requirement to measure the oil temperature. This started with your comment that the tester never lifted the bonnet. This is patently incorrect because apart from any emissions requirement they have to check for corrosion near structural attachments e.g. the front strut top mounts. Please don't make unsupportable comments and then compound it by saying I'm making things up.

Read my earlier post, I said it is highly unlikely that an EGR delete will be piccked up on an MOT.
Just because you haven't been caught does not mean your vehicle is legal.

Actually yes I do watch every minute. I have a very strong distrust of garages. Certainly the last dozen tests over three vehicles never resulted in the bonnet being opened.
The one garage that tested out of my sight sought to rip me off with tales of work required but not a failure. The following year the new test centre found no such issues.
