I'm pondering exposing the gubbins (wiring that comes out of the lights stalk) beneath the steering wheel but there being an air bag tucked under there obviously don't wish to start interfering with that! Would anyone know if it's a simple case of battery disconnection to dis-arm the thing or what?
 
What are you trying to achieve? It sounds like you just want to have exposed wiring, which hopefully is not the case.

The airbag contains a small capacitor to power it even when battery power is lost to it. This drains its power quite quickly once the engine is stopped and ign is off, but it is important to ensure it is dead before working on or near the airbag. The correct procedure is to disconnect the battery and wait at least 10 minutes. Longer is safer. After this the airbag module can be removed from the wheel, but should always be handled with care. Try not to get yourself directly in front of it, and once removed store in a safe place. Dealers are recommended to place in a steel cupboard!

The switch unit connects to the car via a clock spring. just like it sounds, a wound spring taking the signals across a rotating connection.

However, all this is of little consequence. Are you trying to take power from a particular switch, to feed something else perhaps? Not going to work.

The column switches are no longer switches as we know them. They do not pass 12v any more, but are mostly resistors that pass current to earth or back to the ECU via the resistor. The ECU recognises the voltage as a signal for a particular operation, and then sends the required message to the appropriate module. So if you are looking for a 12v feed to something, you'll be unlucky.
